Cheese Croûtes, Romandy-Style
Slices of bread toasted golden, moistened with white wine, under a blanket of melted Gruyère — French-speaking Switzerland on a plate.
Ingredients
- 8 slices white bread
- 2 dl white wine (1 dl for moistening + 1 dl for the cheese)
- 400 g Gruyère (or mountain cheese)
- 1 tbsp flour
- freshly ground pepper
Method
- Toast the 8 slices of bread on both sides, on a tray in the oven.
- Sprinkle the slices with 1 dl of white wine.
- Grate the Gruyère (Bircher grater).
- Mix the flour into the grated cheese, then stir in 1 dl of white wine and season with pepper.
- Spread the mixture over the slices and even out.
- Baking: about 10 minutes at the bottom of the oven preheated to 250°C.
